Queso Dip Recipe (No Velveeta)

This easy stovetop Queso Dip is velvety smooth with tangy tomatoes, jalapeños, and flavorful spices that makes it an irresistible dip for game day, holiday parties, and more. Gooey cheese with just the right hint of spice turns a plate of simple tortilla chips into a decadent appetizer that’s sure to impress your guests. One bite and you’ll agree it’s even better than your favorite Mexican restaurant version.

Ingredients

Queso Dip ingredients include butter, onion, garlic, tomato, Jalapeños, cornstarch, smoked paprika, evaporated milk, cheddar cheese, cilantro, chopped tomato, chopped avocado, and tortilla chips.
  • Butter – Salted butter is used here, but unsalted butter is a suitable alternative. You can also use olive oil or another cooking oil in place of the butter.
  • Onion – Choose a small white or yellow onion for the best results.
  • Garlic – Fresh garlic cloves provide the best flavor, but you can substitute with 2 heaping teaspoons of minced garlic from a jar.
  • Tomato – Use fresh tomatoes, or you can use a 14 oz. can of diced tomatoes with the juices drained. You can use the ones with green chiles too. 
  • Jalapeños – Fresh or jarred jalapeños work well, and pickled jalapeños are also an option. Adjust the quantity to match your desired level of heat.
  • Cornstarch – This helps thicken the dip; you can replace it with 2 teaspoons of all-purpose flour if needed.
  • Smoked paprika – If preferred, you can substitute smoked paprika with sweet paprika for a different flavor.
  • Evaporated milk – Make sure to use evaporated milk and not sweetened condensed milk. You can use heavy cream if you can’t find evaporated. 
  • Cheddar cheese – Feel free to swap cheddar cheese with white American cheese or with any shredded, real cheese you prefer, or use a mix of shredded cheese varieties.
  • Cilantro – Fresh cilantro leaves are used for garnish but can be left out if you prefer.
  • Chopped tomato – Chopped tomato adds a garnish to the dip but is optional.
  • Chopped avocado – Fresh chopped avocado serves as a garnish.
  • Tortilla Chips – Serve with tortilla chips for dipping.

How to Make the Best Queso Dip

Next process in preparing Queso Dip is to sauté the onions and garlic.

Step One: Sauté the Onions and Garlic

  • Melt the butter in a medium saucepan or double boiler over low-medium heat.  Add the diced onion and garlic and cook, stirring, for 4 minutes or until softened.  

Step Two: Add the Tomatoes

  • Add the diced tomatoes and jalapeños and cook, stirring for 2 minutes or until the tomato has softened slightly.

Step Three: Add the Seasonings, Milk and Cheese

  • Add the cornstarch, smoked paprika, ground cumin, garlic powder and onion powder.  Stir until well combined.
  • Pour in the evaporated milk and cook, stirring, until the evaporated milk is warm.  
  • Add the shredded cheese.  Once the cheese melts and is smooth, remove it from the heat.
  • Pour the smooth queso dip into a dip bowl.  
  • Garnish with the cilantro, chopped tomato and chopped avocado, and serve with tortilla chips.

Storing Cheese Dip

  • Refrigerator: Store leftover queso dip in an airtight container in the refrigerator for up to 3 to 4 days. Reheat gently on the stovetop or in the microwave, stirring frequently.
  • Freezer (not recommended): Freezing queso dip is not recommended, because the cheese can separate, and the texture becomes grainy when reheated. For the best quality, enjoy your dip fresh or store it in the fridge.
