  • Sweet corn – use frozen corn that has thawed or canned corn, rinsed and drained
  • Garnish – Fresh cilantro and chopped green onions
  • Tortillas – Homemade tortilla strips or tortilla chips

Step One: Add the Ingredients to the Crockpot

Ingredients for Slow Cooker Chicken Tortilla Soup include • 3 chicken breasts, boneless and skinless • 1 onion chopped • 2 cloves garlic, minced • 1 teaspoon ground cumin • 1 teaspoon chili powder • 1 teaspoon salt • 1/4 teaspoon black pepper • 1 teaspoon sriracha sauce • 1 can (28 oz) diced tomatoes • 4 cups chicken broth • 1 can (17oz) canned red beans drained and rinsed • 1 1/2 cups frozen corn • 2 tablespoons chopped cilantro • 2 green onions chopped • Tortilla chips strips (optional)
  • Place chicken breasts and all the other ingredients, except the cilantro, and green onion, in the crock pot.

Step Two: Cook the Soup

  • Cook on low heat for 8 hours or high heat for 4 hours.
