- 3 chicken breasts boneless and skinless
- 1 onion chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon sriracha sauce
- 28 ounce can diced tomatoes
- 4 cups chicken broth
- 17 ounce can red beans drained and rinsed
- 1 1/2 cups frozen corn
- 2 tablespoons chopped cilantro
- 2 green onions chopped
- Tortilla chips strips optional
In the slow cooker add all the ingredients, except the cilantro and green onion.

Cook on low heat for 8 hours or a high heat for 4 hours.
Remove the chicken breast from the slow cooker, shredded it with the help of two forks.
Return the chicken to the slow cooker and stir.
Serve warm
Garnish with cilantro and green onion.
