- 1 pound lean ground beef
- 1 pkg of dry taco seasoning
- 3 tablespoon water
- 1 ½ cups uncooked pasta
- 2 ½ cups beef broth
- 16 ounces mild chunky salsa
- ½ cup cheddar cheese freshly shredded
- ½ cup colby jack cheese freshly shredded
- chopped cilantro for garnish (optional)
In a large skillet, cook the ground beef over medium-high heat for 2-3 minutes or until fully browned. Drain any excess grease.

Add the taco seasoning and water and mix in with beef. Reduce to low-low medium heat and simmer for another 2 minutes.

Slowly pour the beef broth into the skillet then add the pasta and salsa. Stir with a wooden spoon until well combined. Simmer for 10 minutes or until pasta is tender and the mixture has thickened.
