Line a 8 x 8 baking dish with aluminum foil. Spray with non stick baking spray and set aside.
Place chocolate chips and sweetened condensed milk into a medium sauce pa over medium heat stirring until chips are almost melted. Remove from the heat and continue to stir until the mixture is smooth and all the chocolate chips have melted. Stir in peppermint extract and crushed mints.
23 ounces white chocolate chips, 14 ounces sweetened condensed milk, ½ cup crushed candy canes or mints, ½ teaspoon peppermint extract
Remove half of the batter to a bowl and add red food coloring, stirring until combined.

Add dollops of white and red batter to the baking dish into a even layer. We did this in two layers to get an added color effect.
Add more crushed candy canes to the top of the fudge before chilling (optional).
Chill for 2-3 hours and then cut into squares.
