Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
Using a standing mixer, beat the butter, sugar, eggs, and vanilla until combined, creamy and fluffy.

Using a medium bowl, whisk the flour and baking powder.

Gradually beat in the dry ingredients into the wet until a soft dough forms.
Using a medium ice cream scooper, scoop out some dough and roll into a ball.
For evenly baked cookies, use a food scale and make each cookie 2.5 ounces. This will ensure the cookies bake evenly.
Pour the sprinkles into a bowl and roll the cookie dough ball into the sprinkles to completely coat it.
