Ingredients

FOR THE COOKIE:

  • 1 ½ Cup unsalted sweet cream butter softened
  • 1 ½ Cups sugar
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 4 ½ Cups flour
  • 3 teaspoons baking powder
  • 2 Cups Bright and colorful funfetti sprinkles

VANILLA FROSTING:

  • 1 Cup unsalted sweet cream butter softened
  • 3 Cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 4 Tablespoons heavy whipping cream
  • 1 large piping bag with large round

Instructions

FOR THE COOKIES:

  • Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
  • Using a standing mixer, beat the butter, sugar, eggs, and vanilla until combined, creamy and fluffy.

  • Using a medium bowl, whisk the flour and baking powder.
    4 ½ Cups flour, 3 teaspoons baking powder
  • Gradually beat in the dry ingredients into the wet until a soft dough forms.
  • Using a medium ice cream scooper, scoop out some dough and roll into a ball.
  • For evenly baked cookies, use a food scale and make each cookie 2.5 ounces. This will ensure the cookies bake evenly.
  • Pour the sprinkles into a bowl and roll the cookie dough ball into the sprinkles to completely coat it.

  • Place the cookies onto a cookie sheet and lightly flatten into a thick disk.
  • Bake in the oven for 12-15 minutes or until lightly brown.

FOR THE FROSTING:

  • Using the standing mixer, beat all ingredients, except the sprinkles, together until combined and smooth and holds a peak.

  • Scoop the frosting into the piping bag.
  • Starting from the middle of the cookie, pipe a thick spiral of frosting from the middle to the edge of the cookie.
  • Allow the frosting to harden before enjoying.
